In times like these, we try to make both good tasting and smart decisions. So, how far does one of Rick's hams go? Far!

This past holiday I decided to test the reports and really see how far our hams would go.

We started with eleven of us for brunch. The menu included panettone french toast, (so good!) a few sausages (burnt by me), bacon (extra crispy - otherwise known as burnt), bread, eggs and ham. When the ham came out of the oven, my Dad asked, "Is that an especially big ham?" "No," I assured him. "This was the normal size…."

We made a decent dent in the ham, about 1/4 of it was eaten by the end of the brunch -- about 4 1/2 pounds. Ann took home a big chunk (about 3 pounds) and turned it into split pea soup and sandwiches. Bear took home one monstrous slice (about a pound) to eat "plain jane", and my Aunt took a small chunk (about a pound) home too. My Mom and Dad kept about 3 pounds to freeze and eat over the next couple of days.

That left us about 6 pounds to take home. I sliced a bunch just to eat and then froze the remaining 5 pounds in a zip lock bag. Two weeks ago, roughly 6 weeks in the freezer, I pulled it out to make split pea soup but ended up making Potatoes au Gratin instead. It was good! We ate it at home, my parents had some, and the warehouse crew ate the rest over three lunches. Roughly serving 21.

So, by my math, the number of servings made around 46. Your number will vary... Not too bad! It comes to about $4 a serving for one of the most delicious hams on the planet. You could say this smoked ham really has legs!

A combination of many recipes…the key is to remember to cook in the top third of the oven and not to boil the potatoes too long. Just barely done makes the best…really quite easy!
