cool beans
Where the phrase, "cool beans" comes from no one seems to know. Many believe that it comes from Boston and the cooling of baked beans... (Boston Baked Beans) Pretty silly, I think. And the idea that the saying comes from the Bush Beans TV commercial in the 90's has no merit, since people were saying "cool beans" long before the 90's. Not that it really matters…"cool beans" is merely a blip in time compared to the history of "canned" beans.
In 1795, a 12,000 Franc prize was offered by Napoleon for anyone who found a method of food preservation to help fuel his army while out in the battlefields. The winner was Nicolas Appert, who, in 1809, invented a solution using champagne bottles. This is considered the start of the canning industry.
The basic concept is to heat the food to boiling, and then seal it in an airtight container and, voila, the food is preserved. As we now know, the heat kills all the microorganisms, which as Louis Pasteur demonstrated, are what causes food spoilage. Canning continued to grow as the process got better and we perfected the ability of preserving the food at its peak of freshness and nutrition.
