Located at latitude 42 degrees south, Tasmania's latitude is shared only by the Southern most tip of New Zealand and the southern tip of Tierra del Fuego, Chile. At this latitude, the circum polar winds provide a constant westerly trade wind known as the “Roaring Forties.” This wind draws moisture off the great Southern Ocean and deposits boatloads of it as rain on the Western side of Tasmania - providing water to the Tasmanian rain forests under which the Leatherwood trees thrive and produce their exquisite, golden nectar. By virtue of the pristine and remote location of the rainforests where the Leatherwood trees grow, all the Leatherwood Honey that Julian Wolfhagen, Founder and General Manager of the Tasmania Honey Company, and his bees produce is truly organic.
But it's not just the Leatherwood trees that grow there. Tasmania is one of the few places left on earth that defines “flora” and “fauna”. The varieties of honey that Julian’s bees produce are, in a sense, like the land - one of a kind.

Tea Tree (Manuka) Active Honey (300+)
Manuka Honey is well known for its health benefits. What many people don't know is that Manuka Honey is actually produced from the nectar of the Tea Tree blossom, or Leptospermum. Julian not only carefully extracts, cleans and bottles his Tea Tree honey to preserve all the natural benefits of this wonderful honey, but he carefully separates his harvest into two classes: Above and below 300 mg/kg on the Methylgloyoxal content scale*. Julian labels the highly active portion of his yearly harvest as Tasmanian Tea Tree Honey. So, if you're looking for those anti-microbial, anti-fungal and anti-bacterial benefits, this is the honey to get. Oh yeah, and it tastes great too. Christmas Bush Honey
Imagine a coastal area filled with thousands of prickly bushes covered in millions of tiny white flowers the shape of bursting stars. This is the Christmas Bush of Tasmania. Julian produces a relatively small amount of this 'Special Reserve' honey – so don’t wait. Its flavor is mellower than the Leatherwood Honey, slightly herbaceous with marzipan tones. This honey is very heat sensitive so it's packed straight from the extractor. Consequently, the honey may contain small particles of bees wax. This may be why the texture is bit more “solid” than his Leatherwood Honey.

French Lavender Honey
Few people are aware that Northeast Tasmania has the largest planting of French Lavender in the southern hemisphere. Julian’s Lavender Honey is delicate and fragrant – just as you would expect it to be. It reminds me of the lavender honey my grandmother used to spread on her toast and put in her afternoon tea. Leatherwood Honey
The cornerstone of Julian’s honey production, Leatherwood Honey comes from the pristine wilderness of southwestern Tasmania. Every summer the bees are taken into the rainforests where they seek out the white flower of the Leatherwood tree. The honey they produce from the Leatherwood nectar has a very distinct, slightly spicy aroma and a strong almost peppery flavor that is popular with honey connoisseurs the world over.
