Nut Oils Give a Boost to Your Cooking and Your Health
Oils made from pecan, macadamia nuts, avocados, pistachios, walnuts, hazelnuts, and argan kernels can contribute significantly to a healthy diet, and they make some of the tastiest finishing oils imaginable. In regions where flavorful seed and nut oils are prevalent, they provide many of the daily fat calories both during cooking and as a last-minute flavor-enhancing drizzler at the table. As it turns out, nut oils are another key part of the heart-healthy Mediterranean diet, along with freshly pressed olive oil.
Because of the abundance of omega-6 heavy corn and soy oils in our foods, meats and packaged products, the typical American diet is especially high in omega-6 fatty acids, and especially low in omega-3 and omega-9 fatty acids. Believe it or not, with a few substitutions and a little thought and planning, consuming a more balanced and fat-healthy diet is easier than you think. Avocado Oil:
High in oleic acid, Avocado oil is very light and smooth. Add a little extra avocado punch to your next Avocado & Grapefruit Salad.
Roasted Pistachio Oil:
Also a rich source of oleic acid and vitamin E (gamma tocopherol), this lightly roasted pistachio oil makes a wonderful addition to your sautéed green beans with roasted pistachios, or give your next Summer Farro Salad a healthy and fresh-tasting boost by mixing half-and-half pistachio oil and olive oil.
Roasted Pecan Oil:
65-70% oleic acid, Pecan Oil is a perfect finish oil for roasted squash soup, or grilled or oven-roasted squash. Also a perfect addition to a Wilted Spinach Salad with Bacon & Pecans.
Macadamia Nut Oil:
Favored for its light flavor and tolerance to higher cooking heats, Macadamia Nut Oil is high in both oleic acid, and in palmitoliec fatty acid – and fat found in fish oil. Used instead of vegetable or olive oil in just about any dressing recipe. Try it instead of olive oil in your next Vinaigrette.
Lightly Roasted Walnut Oil:
One of the few oils that is high in omega-3s – and delicious too. Add a little walnut zip to your next Waldorf Salad,
or drizzle it over a Maitake Mushroom Pizza before serving. Yum.
Camelina Oil:
Although a grain oil, Camelina oil is very high in omega 3 fatty acids. With a mildly nutty flavor, you can easily use camelina oil instead of vegetable oils in any salad, or drizzle it over roasted vegetables instead of using butter.
Mustard Seed Oil:
A common ingredient in Indian Cooking, spicy mustard seed oil contains significant amounts of omega 3 fatty acids and Vitamin E.
Roasted Argan Oil:
Another “nut” oil that contains a significant amount of omega-3 fatty acids. Argan oil has a strong and unusually nutty flavor. Add a little to your next batch of late-night popcorn for a extra nutty treat.
And don’t forget Rice Bran Oil:
Although not technically a nut oil, Rice Bran oil is high in vitamin-E group anti-oxidants such as Tocopherol, Oryzanol and Tocotrienol. Rice Bran oil has a light taste, a high burn point, and is extremely shelf stable. Rice Bran oil is a perfect replacement for corn or vegetable oils when baking, high-heat frying or sautéing. We use it at home every day - we couldn’t live without it.
