Salts that taste so good you'll want to lick them... You know something is good when you want to have a spoonful of it ..... unadorned!
When we come across foods like these, we realize that tradition delivers some of the most wonderful delicacies that only a lifetime of love and care can create. Along with tradition, passion and the unbending desire to perfect, means the best of times is now.
We have a fantasy about the products we carry; that each and every one will be "spoon ready". Where, with just a spoon, you will want to consume it all - no need to add anything or add it to anything. And though we can't realistically always achieve this ideal, it is what we strive for.
Today we are introducing a case in point. These three salts are indeed "spoon ready" - and they caught us totally off guard. We were reminded how spectacular salt can be! It helps give you perspective - where passion and love creates life.
These three salts are simply amazing!

My favorite of the three salts is the Soy Salt. It is made from artisan shoyu that has been fermented in 100-year-old cedar vats for 3 years. It has amazing crunch. The big flakes and even, crispy pieces, have a distinctive flavor that is hard to describe. To me it's more like a treat than a "salt".
You can use it as a garnish to add a little flavor, add it for a touch of beauty, or sprinkle it to add a bit of mystery to almost any dish. It likes to be served with sushi, sashimi and rice dishes. But don't be shy. Try it as a topper to pizza or pasta, salads or fish. Or keep a little around for when the day just seems to go wrong... read more.
This extremely fine salt, both in its quality and in its grind, creates a puff of green fairy dust when you open the container. The phosphorescent color compels me to dip in and taste. The enticing look does not disappoint. A sprinkle into your hand, and a good lick and your taste buds are rewarded with a green tea explosion with a salty conclusion. You'll never feel overwhelmed as the "salt" moves to the outside and back of your mouth, and the satisfying "green" remains. It's wonderfully pleasant. As the world shrinks and the squeezing of the continents brings us closer, cultures meld together, sometimes good and sometimes less so. But, what does this mean when it comes to food? What it means for us is that foods that have been hidden away in a village, a town, or a city can come to light.
It is in this last salt that we find a wonderful twist on a citrus fruit that has been gaining mainstream popularity. Though you might know it mainly as a liquid, this citrus is in a salt. The color is a simple, light, pure yellow, and, like the green tea salt, it's so finely ground it looks like powder. Smell it and you find your nostrils filled with a citrus of unknown identity. The taste on the tongue is less defined, more of a mystery, and the saltiest of the bunch. It leaves a wonderful feel of salt in the middle of your tongue. If you know Yuzu, you might recognize the sharp, not so sweet character coming through, with its underlying citrus dancing around on your buds. The cherry season is almost over, but Tom's cherries just keep coming. His orchards sit high on a hill and are just a little bit cooler than the rest of the Valley.
