Wild Alaskan Copper River Salmon Never frozen-Copper River Salmon
The Run Has Started!

This is what your Salmon should look like. It's an amazing oil rich fish, and once you have the real deal, you'll understand why everyone talks about Copper River Salmon.

The catch is coming in daily, so now is the time to have fresh Wild Alaskan salmon!

We still sell our fish the old fashion way, even though we are online. We talk to you, via email or on the phone. We let you know what's best "right now" when you contact us. And, we give you "market price" as well. Usually "market price" is code for more, but for us, we hope, it means less. And, if we think the salmon is too expensive, we will tell you and let you decide.

Seem expensive? It is, but remember our fish is just off the boat, out of the water, and on a plane to you. Airfare, especially when there are no stops, isn't cheap. And when flying fish, it's no different.

Last week was the first week of the run, and usually the highest prices of the year. But the price should fall as the weeks go on.

So far the news is that there is an abundance of Sockeye running in the Copper River this year. King Salmon is running too and as usual significantly more as there is significantly less available. Both are the best and, even if you like one more than the other, both are worth having!

The best preparation is as simple as salt and pepper on the grill, planked or Northwest Native style on a stake in front of your bonfire. A little char and crustiness is just right! Top with sweet soy (Ketjap Manis), diced ginger and toasted sesame seeds. Perfection!

A fruit or drupe, this nut is not a nut and not nearly as dangerous as one is led to believe.

Contrary to popular belief, these nuts are not deadly.

As the common saying goes if the fall doesn't hurt you, you'll be better for it. 

Just a few hundred people a year die from coconuts falling on their head worldwide, so one is reasonably safe unless there's a coconut tree nearby. 

Coconut milk and water on the other hand have been touted recently as exponentially unbelievably very fabulous for you. We don't know about that but we do know that the coconut milk that we use is indeed fabulous! Consisting of just two ingredients: coconut kernel extract and water.  That's it.

Filled with lots of B vitamins and other good stuff, coconut milk is a versatile and surprisingly useful ingredient to have in your pantry.

Not only is coconut milk useful for desserts such as coconut cream pie, coconut cupcakes, coconut hot white chocolate, and of course coconut ice cream. 

Its also a wonderful ingredient in savory dishes as well. Think of a Thai Curry for your shrimp or a coconut rice (use coconut milk to cook the rice) or a wonderful curry garlic pepper milk sauce for your fresh fish!

We opened and tasted a boat load of coconut milk and this is the best we have used!

Shichimi Togarshi Red Pepper Mix Seven Spice

Shichimi Togarashi!
The seven spices of prosperity!

Shichimi Togarashi, a blend of flavors that may have been created in the 17th century, as a way to help one to eat healthily.

Also referred to as Seven Spice, the number of ingredients in this pepper mix, this number is considered prosperous (lucky) and refers to Shichifukujin, the Seven Lucky Deities.

Though considered hot in Japan, it's what we might consider here as spicy but certainly not screaming hot. And thats what makes its so nice to use. It adds a little heat when added to dry dishes, it really seems to come alive when added to liquid like soup or oil from a fresh fish.

Unlike so many spice rubs this one is not sweet with sugar, instead it has a wonderful hint of citrus. In addition, this mix has sesame seeds, ginger and seaweed which adds the umami that completes the seven flavors. With its little circular hole in the top it shakes out perfectly to make your Udon Noodles sing.

As a perfect complement to fish or fowl, imagine we have drawn a line down the center of our salmon fillet with ketjap manis, diced ginger, and gentle sprinkle of Nanami Togarashi to kick it up without dominating. Important when having any freshly caught fish.

Easy to have about, and just under a million ways to use it!
