Buttery right off the bat, the olive “edge” comes on as the buttery’ness dissipates. Towards the back outer edge of the tongue you are reminded that it is oil from an olive as the sharp flavor line is drawn.

Quickly, right after a piercing “bite” almost dead center in the back of the throat comes on and then goes. For some it will make you cough, for others it will be a tickle.

This 2014 fall harvest/ 2015 year oil is full of personality without domination. Making a statement about who it is, without demanding attention. A very versatile oil in that it can make a salad sing and a simple pasta dance!

In the fog of the Soquel Cove, Chris of Colline di Santa Cruz has grown her orchards from the ground up, literally! On a steep hillside she terraced the land for olive trees and her dried flowers.

With her trees now 21 years old, the olive oil has a unique terroir that is distinctly “Santa Cruz”. As the Santa Cruz County Farm Bureau’s 2015 Farmer of the Year, Chris’ drought tolerant Olive Trees are a true testament to her foresight so many years ago.
