These Three Kings of Olio Nuovo
couldn't be greater & couldn’t be better!
The first of the new oils have arrived. Full of unique flavors, each bottle of olive oil is so different from each other, it's amazing that they all come from the same fruit. My tongue, my mouth, my cavities and the back of my throat are singing songs that I've not heard in a long, long time.
These oils are not only great, they are fun. Take a look at the tasting notes as a basis for forming your own opinions.
Olio Nuovo, or new oils are all about the freshly harvested olive oils that happen across the planet north of the equator. This time of year, they are blended to make some of the most robust, flavorful oils you can have.
Harvesting in late October and November the families who raise the olives press and bottle a small portion of the magical elixir before the natural sediment falls out. This creates an oil that is so punched full of character it begs to be poured over fresh pasta or toasted salted bread! Almost as good as being in the orchards on harvest day.

Colline de Santa Cruz!
Grown in the Salt air of the Bay!
Colline di Santa Cruz 2015's color is a dark, rich, vibrant green, reminiscent of some Spanish oils from the past.
To the nose, it's very light with a distinct tinge on the outer edges of your inner nostril. It's a wild olive oil this year: try a mouthful and you will have
a buttery cloud in your mouth first and then it disappears within nano-seconds to be replaced by a pleasant bitterness on the edge of the tongue and a kick in the back of the throat. It’s a wild ride.
Buttery is probably the wrong word; olivey, if that is a word, describes that disappearing vapor flavor best.
If you take in a swig and
hold your tongue to the top of your mouth, the flavor and taste of the oil will last a bit longer before suddenly vanishing.
Some oil remains and glistens on the lips and is quite a pleasant reminder of the flavors.
If swallowed correctly
a good cough will ensue.
A robust pasta like squid ink would pair well with this oil.

Tiburtini!
2015 Fall Harvest Olio Novello!
Tiburtini's Olio Novello is wonderful and always a joy to behold.
The first swig of this oil imparts wonderful almond notes, with a fresh new oil green feel. This fresh, fruity,
olive oil has the flavors of a mature oil.
Cloudy, as all new oils are when they are bottled so soon after pressing, this oil is very much alive with personality and punch.
It's a wonderful “all-flavor” oil with the hints of fruit, butter and nuts. And when tasting, there's a
very slow and tiny tickle that comes with this oil. When swallowed quickly, you'll get the new oil cough.
When it's gone (from your mouth) it's gone, no residual finish; this oil exists in your mouth and when done your mouth feels alive. Just a hint of bitterness on the edges and towards the middle of your tongue.
Tiburtini has had a following from the moment we started carrying it a long time ago and it continues to have a dedicated following over ten years later.

Katz December's New Oil!
fruity + bitter + pungency = harmony
Katz New Oil 2015 color has a beautiful yellow tone with green tints.
Thick and buttery to the mouth, it’s soft; a strong gentle feel makes this new oil quite wonderful. It pleasantly envelops the entire top-of-the-mouth before imparting the flavor of olives throughout.
As the oil departs and finishes, it rolls off the edges of the tongue in a very cleansing way. When the oil rolls to the back of the mouth and the tongue specifically, it's gentle with distinct sophisticated flavors and just a hint of bitterness with a wonderful olive taste.
If you squeeze the oil with your tongue to the roof you will get some bitterness on the edges of your tongue; just the right amount.
There's a wonderful flavor combination in the oil this year. With a surprising hint of green almonds, meshed with a mellow artichoke, this year's oil has an almost fruity demeanor, is completely different, sophisticated like it never has been before.
This oil is far from mellow, it has all the characteristics of a
New just Harvested Oil, and as the flavor of multiple tones subside, you can feel the back your throat as the pepper finish starts to build slowly, racing to a good strong cough!
