Whidbey Island may be known for
"An Officer and a Gentleman" (1982) to the wider public, here in the northwest we know it for its beans. (And maybe a few other things too.)
Did you know that Whidbey at 55 miles long is the 4th largest and 4th longest island in the continental US? It is the largest island in
Washington State. It is also reputed to have the largest colony of artists in the state.
Reachable by
Ferry from the south end, and by a bridge at
Deception Pass on the north end, Whidbey Island is a wonderful small farmer island where foods are passed from generation to generation, from neighbor to neighbor.
Along with
Penn Cove Mussels, just on the far side of the island is Georgie, a fourth generation farmer, who grows hundreds of varieties of herbs, edible flowers,
hardneck garlic and some of the most amazing beans (we think) on the planet.
With
three varieties of beans to choose from, the year's harvest yield was small and all are in short supply as the inconsistent weather reeked havoc on things that grow. Though all the beans are different, they share one great characteristic, they all hold up to a hardy baked bean dish! Nothing like cooking for hours and still getting that individual bean look and feel when you're done!
Soak them overnight and make your

Raspberry Flower Honey!
Missing for 3 years, it's back!
I have been thinking about
this honey and what to say about it for months. Honey is one of those foods that is often described as amazing. In its natural state, it lasts many, many lifetimes!
Tasting honey is fun, yet at some point you form a strong opinion about the ones you do like and some you don't.
So, quite frankly, when it came to taste testing a
"red raspberry" honey it seemed like it would be less than exciting. Boy, was I wrong! I love this honey!
So simple. A mono floral honey is only from one flowering plant, creating a flavor so unique that each one tastes different! And when you pair
this honey with fresh fruit the match is magical! The honey takes on a bright vibrancy!
And it is my all time favorite when added to a black tea or even just hot water!
If there was a color that could describe
the flavor of this honey, this label does it. It's flowery (in a good way), it's sweet (in a honey way), and it has this complete honey vapor feel. In tea, for me, it compliments, it enhances, and it adds personality.

A Honey of a Vinegar
Organic Raspberry from Italy
Honey based vinegars are a true art form and very difficult to do year in and year out!
To the nose
this vinegar seems like many others, but to the buds, the vinegar has that distinct fruit vinegar feel that raspberry seems to impart. Don't think, though that it will be a sweet vinegar full of distinct raspberry notes; it does not have that at all.
Instead,
the raspberry is embedded in the tart, acidic mead based vinegar, creating a mouth movement of back and forth as you try to get all you can from the “feel”.
A clean, bright vinegar like this one deserves plenty of space to show off. The clean fruit taste backed by the
natural tartness of vinegar makes this a natural for marinades. Combined with just enough good olive oil and garlic and soaked for a short time, shrimp or firm fish will shine. For a complimentary sparkling sipper, add a splash of
raspberry vinegar to carbonated water. Refreshing!
Smooth, clean and invigorating! Once you taste it, you'll think of a million ideas to use it with and in!
So many uses for vinegars like this ... for vinaigrette, deglazing, fresh fruit, and in marinates. Once you use (any) vinegars, you'll wonder how you got along without them!
