Naturally Smoked (twice) bone-in heritage ham!
My favorite story about ham involves
green eggs, not exactly a good eating story. Just the same, ham, when great is a great story. For me growing up, ham came in a can (Ham-in-a-can circa 1926) and it was good. Why? I think because it was moist. Unlike so many home-cooked hams of the time that involved washing, prepping and cooking only to have the result turn dry. Something about shoe leather, as I remember.
Today, I think we might find the ham in a can not so appealing and, in fact, almost unpleasant. It fits the bill for some things, like frying over a campfire, though I might prefer
SPAM over that “canned” ham.
So, when our favorite applewood smoked
Berkshire ham, with the bone-in, (for much better flavor) re-appeared in our lives this past holiday we were ecstatic! Not to throw caution to the wind, we ordered up one to taste test it with our family of food critics (who don’t hold back) and the response was overwhelmingly positive.
2 key indicators for me are; 1st stealing a bite before I am done carving (simple to slice, all you need is a knife, there is no wrong way) and the 2nd is getting seconds.
In addition, lots of thanks and finger licking comments of appreciation!
This is one excellent brined, smoked, chilled, and smoked again ham.
We love this smoked ham and we are so glad it’s back!

Fabulous Corn Cookies!
Who would have thought that a boring, incredibly simple cookie could be
so awesomely delicious. One bite, one crunch, one munch and you will understand why these little treats are a runaway fave!
