Tasting Notes for almost all of the 2015 harvest - 2016 oils. Remember, olives grown above the equator are harvested in the fall. Thus, the freshest pressed oil is from the 2015 calendar year. Read on and see what piques your interest!

Chef's Pick Organic
This oil is one of our all-time-always-our-favorite olive oils, every single year since the beginning of time. From the first year to this one, the oil have matured and we and our palate have matured along with it. This year may be the most "complete" oil ever.
To the eye: A mixture of darkness of green and a lightness of yellow.
To the nose: It makes the nose pucker with some wonderful green and fruity notes.
To the mouth:There's a warm-up butteriness on the first swig, along with it a cloud of vapor that is very expressive. The finish has a bit of bitterness on the edge but not overpowering. The second swig you realize the tip of the tongue gets an abundance of gentle olive flavor with a bit of a tingle. The tongue and the mouth is enveloped in this wonderful cloud of all over flavor that settles down to give you more notes of green artichoke and asparagus and flowery butter.

Rock Hill Ranch Organic
To the eye: A light yellow with hints of green.
To the nose:
A green grassy note with a hint of vegetable.
To the mouth:
The first gulp is full and filling, rich in flavor with lots of olive running through it. Perhaps I took too big a swig, but the peppery kick is vibrant, tingling & quite wonderful. On the second swig, there's a lot of open flavor with a lot of vapor with it too. Artichoke, asparagus, olive is all present. With only a hint of bitterness on the edge of the tongue, this oil has really developed into something quite special this year. I think it is indeed the best of the year so far. This oil has a lot of personality!

Chateau Virant A.O.C. - fabulous French Oil
There is a reason why this oil has been flying off the shelves! The first shipment is gone, but don't despair, the next shipment is on it's way. This distinctive olive oil has won so often at the annual Agricultural Show in Paris - it won a gold medal 9 out of 10 consecutive years. The color: With darker lines within the color it's still a light yellow-green.
To the nose: a slight hint of green and olive.
To the mouth: It's an overwhelming buttery feel. As it moves to the back of the mouth, the bitterness characteristic of a good oil spreads out across the top of the tongue, all but floating just above it as if it's not in contact. The second swig you notice the olivey flavor below that floaty cloud of butter. The burn or peppery kicker kicks in at the back of the throat quite large yet not overpowering. It's not a pinpoint location for the cough, but an overall wonderful gently feel.

The most Beautiful Bottle
Encapsulated in this bottle is a Moroccan Olive Oil that will please any palate. With its flavor roots of traditional French notes, this oil is more subtle than you might expect. The amazing flavors are subdued so they don't jump all over your mouth perhaps like an Italian would.

Olio Verde - Sicily
This oil has been a staple in our stable of oils since we started. It continues to have a following starting some 18 years ago! (did we mention we love our customers?) This oil is full of personality and it's not shy to tell you. Full of green grassy notes.
To the eye:
As typical this oil is always one of the deepest darkest green yellow colors.
To the nose:
Distinctly green grassy smell.
To the mouth:
The first swig is distinctly green grassy with a finish of artichoke. With a hint of asparagus the second swig builds the cough. A richness and fullness envelops the mouth with full flavors. We've had this oil from the very beginning and this year it doesn't disappoint. Quite a wonderful oil with a burn in the back of the throat creating a cough that spreads out evenly in a wonderful manner.
This oil is bold, full, rich and filling to your taste buds.

Desert Miracle - Morocco
To the eye:
A wonderful light yellow color.
To the nose:
Wonderful ripe olive smell again with a hint of bacon. How unusual is that!
To the mouth:
Lots of olive flavor with a mixture of flavors that you can taste. Lots of butter, that comes in on the tip of the tongue. The second swig brings on some very subtle flavor that is hard to describe and you can taste all of it on the edges of your tongue. This is quite nice this year, perhaps the best its ever been. Little or no peppery finish, yet it still speaks loudly in subtle way. This oil would do really well in a couscous salad.

Fruitée & Intense Nicolas Alziari - Nice
This olive oil is the magical blend of a variety of olives that are harvested early, still green. Unlike his classic blue tin -- which is 100% late harvest nicoise olive. With a hint of age and the mixing of late harvested olives, this oil has a distinct flavor. With a hint of hazelnut this oil is unique.

Nicolas Alziari
No list of Olive oils should forget this wonderful oil. To the eye: Light yellow color.
The nose:
A light but olivey smell.
To the mouth:
At first gulp the oil is almost as if it's not there in your mouth. Yet the flavor of olives are oh so present, then you feel the oil on your lips and tongue and it finishes with bit of bacon flavor. The second swig is light and the feel of buttery asparagus comes through. It is quite delicious.

Fattoria di Petroio
This is the sleeper of all the oils we carry. We haven't talked much about it, not because we don't like it, quite the contrary, we do, but because we haven't, until this year, been able to get enough to share. It comes to us via Sharon (perhaps you've met her in the store, on the phone or in email) whose friends grow and produce this oil of Quersegrossa, Italy. As many families are, they are known for their wine and for their oil locally. To the eye: Color with a strong yellow presence, green, green yellow color is deep and rich.
To the nose: The hints of green grassy.
To the tongue: The first flavor is a light grassy feel with a very buttery top. The finish has a bit of bitterness and ever so lightly on the edges of the tongue. The burn is at the back upper part of the throat. Present but a very light and calm tickle. Overall, what starts out as almost to mellow oil is very complex with lots of hidden flavors to make a very unique oil.
