Early Robin Cherries
This is why we love Washington and its cherries! Early Robin Cherries are early ripening Rainier-like Cherries. They are very low acid, so they taste very sweet. With its characteristic cream-colored flesh, Early Robin Cherries are a new variety, and farmers will not pick them until the sugar brix (a measure of how sweet the cherry is) reaches17. But, some wait until they reach 20 brix. That is one of the reasons they are so amazingly delicious -- and addictive. We love this cherry best!

Fresh Sweet Washington Rainier Cherries!!!
The Rainier Cherry is the sweetest of all the sweet cherries. With its characteristic cream-colored flesh, Rainier Cherry farmers will not pick them until the sugar brix (a measure of how sweet the cherry is) reach at least 17. That is one of the reason they are so memorable -- and addictive.
The Rainier is a cross between a Bing and a Van -- two sweet-red varieties. Created by Harold Fogle in 1952, who, at the time, directed the cherry breeding program at the Washington State University. And, boy, are we happy that Harold did what he did. We love this cherry best!

The Lapin Cherry! So Good, always special
The Lapins Cherry, is a big, beautiful, dark red, sweet cherry. Lapins are some of the largest, juiciest cherries that grow on trees. They're great for snacking, and so big that one cherry is a mouthful! Kevin Stennes, of Stennes Family Farms, says Lapins are his favorite of all the cherries. And he should know....
Although Bings are the more well-known sweet eating cherry, some of us here at ChefShop.com prefer the Lapin - you'll have to try them for yourself! The crunchiness and juiciness just won our hearts . . . and our stomachs. We love this cherry best!

Sweet Washington Bing Cherries
Bing Cherries are the most popular variety of sweet cherry. The taste of that mahogany red flesh is a signature summer experience in Washington State. Washington produces some of the finest cherries, apples and pears in the world, but most of that fruit is picked early - before the fruit is actually ripe, because it needs to travel by truck or train across the country to reach your supermarkets. We stress, as with all our fresh foods, that they are as close to just-picked as possible and, in the case of the cherries, you must pick them when they are ready and not a moment before! And then it's a race against the clock to consume them as fast as possible! We love this cherry best!

Sweet Sweetheart tarter Cherries
A brilliant red, Sweethearts are a fairly new sweet cherry developed in British Columbia. A large, bright red fruit that matures often five to ten days after Lapins, the Sweethearts have great flavor with a nice hint of tart on the finish to balance the sweetness. Their unique taste is a spectacular finale for the summer cherry season. The slight tartness makes them the best of the bunch for baking, as they lend that slight "sour" cherry flavor to pies, breads and my favorite recipe: cherry clafouti. We love this cherry best!

Willowood Farm Peregion Bean
The Peregion bean is a small but beautiful heirloom bean from Oregon. Found growing wild in a hedgegrow, the beans are a mix of solid mocha and chocolate swirled beans. Firm with a nutty flavor, Peregion beans are good in soups, baked and just an all around all purpose bean that keeps its swirled markings when cooked.

Sour Sweet Vinegar
The versatility of this elixir will expand the repertoire of every level of cook. This excellent vinegar has a rich, complex flavor - try sipping a bit from a spoon. While the nose combines fruity with pleasantly sharp, the flavor is rich, mellow and winey. Katz Agrodolce Zinfandel.
Use this anytime you'd use red wine vinegar. For a simple salad dressing, add just a drizzle of olive oil, along with salt and pepper. You'll find you'll need less oil with the balanced acidity in AgroDolce than in your regular dressing recipe. It's great for sauteing, stir fries and marinades, or try it in our Sautéed Apples, Onions and Mushrooms.

Chef Pam has a catalogue of amazing recipes that include some classic and not-so-classic asian ingredients -- like Yuzu Kosho, classically fermented Shoyu, light soy sauce, wood smoked shoyu, tamarand paste, coconut milk, and more. Pam hasn't finished deciding what she is going to make, but from past recipes and cooking classes, I have a feeling it's going to be AMAZING! Menu includes: Yuzu Kosho Tuna Wonton Crisps, Tom Kha Gai (Thai Coconut Chicken Soup), Lemongrass Sriracha Pork Banh Mi Sandwiches, Pickled Carrots and Daikon Radish, and Edamame Soba Noodle Salad with Miso Yuzo dressing.
