Candied Fruit - Make your own fruitcake

For some it's hard to imagine wanting to make of all things a fruitcake. In fact people might call other people a fruitcake for craving fruitcake. We don't condone calling anyone a name for the impact can be mar-ing.

And as you can imagine, here we believe in all foods (except for maybe truffles of the mushroom kind) and every year we look forward to a slice of Trappist Abbey Monks fruitcake. It's an amazing history of a food that lasted thru the dark ages, even banned by kings for being too energy powered. With proper care and choice a fruitcake can not only last the trek across the Mongolian dessert but taste good too!

Now, to be clear, sweetened preserved fruit is a key ingredient to fruitcake success. And, if you haven't had good candied fruit, you might have some trepidation about eating any at all, let alone a massive grouping in a cake.

How good are they? Candied fruit can hold their own against any candy bar out there. I would eat them plain anytime if they weren't just so sticky. One time I took them on a long plane flight to Europe all packed nicely in a zip lock sandwich bag. Sensing disaster? Yup! Totally. Forgot wipes and my fingers were covered in sweet goodness.

Not just for making a fruitcake, they can top holiday cookies or make easy basic fruit square cookies or even your own candy.

Essential Pantry Faves Re-stock, replenish, get ready!
Re-stock, Replenish, Restore!

As the holiday rush is coming (think this is too early? It just turned into October!) having the pantry ready with the essentials is the key to a smooth running kitchen. Here are our Essential Pantry items that are ones we don’t think about but boy when you are out, you go crazy!

EP Rice Bran Oil. It’s not just for frying or high heat, it’s a good healthy oil and, in part or totality, is a baking oil too. EP Rice Bran Oil stores forever, so keeping a handy squirt bottle filled near the stove makes life easy squeezy.

Yuzu Kosho. Perhaps off the path for you, those who know it, know it to be a versatile flavor enhancer, with a salty hit and citrus twist. And when used lightly the spiciness opens up the flavor. And when used more aggressively, it adds some nice heat. Yuzu Kosho, small package with a big punch, stores quietly on the door of your refrigerator.

Dark Muscovado Sugar. This sweet, flavorful sugar is great year round, but, especially this time of year. We like its full, rich flavor. It substitutes like a champ when brown sugar is called for but it doesn't just slide in, it jumps in and can change a cookie from mellow to a fellow in no time. Add it to your morning oatmeal (ok so everyone knows that), to your baked beans, cookies of all kinds and apple pie! Dark Muscovado Sugar, the big super convenient screw top container is just right at the right time when you need it. (And you can use the empty for storing your …

ChefShop Cocoa Powder. It’s a baseline for us. We have had cocoa powder from when we started 18 years ago and it's still with us. It has evolved, changed and is better than when we started. You can use it to make chocolate sauce (easy easy), add it to your oatmeal, make amazing hot chocolate, truffles (the chocolate kind), and add it to your coffee! ChefShop Cocoa Powder, holds its flavor, stays light and fluffy, and stores perfectly in your empty Muscovado sugar container.

San Giacomo Agro di Mosto!

Agro di Mosto. Balsamic vinegar in a large bottle is a just plain and simple concept. Inexpensive per milliliter, you can use it with gusto. Will it replace your fine and favorite? No of course not, it’s not meant to. Instead, it fills the gaps and allows you to use it more often. It tastes great, wonderful flavor for salads, or in a liberal reduction when deglazing a pan! Agro di Mosto, easy to store and ready to go at anytime.
