The Many Meanings of Chai
The word Chai means “life”, alive, living, and as far back as medieval Spain, the symbol (of life) was worn as an amulet.
In France, Chai (pronounced shay) means a wine “shed” or place to store wine above ground.
In India, Chai, (chi) derived from Chá (Chinese and others), means tea. And in Indian cooking, the word Masala means spice mixture made into a paste or powder, such as chicken masala. Thus Masala Chai is a spiced dark tea.
Jaipur Avenue Masala Chai is more than the blending of the ingredients; it is not just a random mix. In fact it is about finding perfect harmony to create the smooth balance that makes this a very special calming, blissful chai.
The creation of Jaipur Avenue Chai started with an expat from Mumbai, India who was an accomplished textile designer for Oscar de La Renta in NYC, and missed the Chai from “home”. Now a Seattle resident, Jillu found it harder and harder to find the time to make Chai in her new “home”.
When she found out that her husband’s high school friend had created an all-natural, instant, just-as-good as the freshly brewed homemade chai she quit her job at Nordstrom and started Jaipur Avenue.
The aromatic spices chosen are not random and according to Ayurveda, the 5,000 year old system of natural healing; the spices chosen have purpose and are rich in antioxidants with health benefits. Like all foods, the origins are as important as the taste themselves!

NEW! Sweet, just not that sweet
Indian freshly brewed Chai is very sweet. Lots of cane sugar is the ingredient, in combination with the tea that's intertwined with the spices to create an amazing drink. Here in The States we have a tendency to want it to be less sweet. In fact, already the Jaipur Chai is not as sweet as in India.
So, by request, the newest version of Jaipur Chai is Not too Sweet, it's a hot refreshing treat! Reduced sugar makes it great.

Hawkshead Cumberland Sauce
Cumberland sauce is a fruit-based condiment usually eaten on non-white meats such as venison, ham, and lamb. Created sometime in the late 19th century, the sauce is supposedly named after the Duke of Cumberland, although apparently the sauce was invented in Germany. Although the connection to the Duke is questionable, it is definitely ubiquitous in the Cumbria region of England and it is known as a quintessential British condiment - what they call a store cupboard essential.
Traditionally made with redcurrants, damson wine, oranges and lemons, a rich pungent pourable sauce traditionally served with ham and cold meats during the Holiday season; sort of an English cranberry sauce for non-turkey eaters. Great added to gravy to enrich any store cupboard essential.

White Chocolate
Let’s clear this up right away. White chocolate is not chocolate because it does not contain cocoa solids, thus missing the elements of riboflavin and thiamine, key ingredients of chocolate liquor. Chocolate liquor is usually made up of at least 50% cocoa butter, a product of ground roasted cocoa beans, and those solids mentioned earlier. And Valrhona white chocolate is made up of 33% cocoa butter, whole milk powder, sugar, vanilla extract.
It is interesting (confusing?) that white chocolate is not chocolate, but chocolate is not chocolate without cocoa butter.

Linden Lime Tree Honey
Known as Linden or Basswood honey in the US, it is known as Lime honey in Europe.
To me, "Lime" seems like a more appropriate name, given the flavor of the honey. Always one of my favorites, because of the shockingly citrusy brightness that shocks your palette at the back of the throat.

Early Robin Cherries
This is my favorite cherry of the year. Is it because it's the first cherry to get crunched in the mouth? It might be. It might be, with cause, it has some magical touch and crunch and still has amazing cherry flavor. With a tiny bit of tartness that is missing from the Rainiers. I like the personality of the "Robin".
Understand that cherries are like olive oil. To each person, to each palate, it is so personal. What might make your taste buds sing and makes heaven arrive, might only be just another cherry to another. It's not worth fighting about. I choose Early Robins, you choose Rainiers and someone else chooses Bings.
