Mustard BBQ
Sauces that make you happy.
Barbecue sauce is everywhere. And locally you can always find one that pleases your palate. It really is one of those last-minute buys that you make because you need it now (and ran out of time to make it). We are often satisfied because it “does the job”, though “satisfied” is rarely what we strive for except for perhaps bbq sauce.
Kozlik’s BBQ Sauces are one of those special exceptions. To the nose they are twingy, sweet, mustard’ee, and each one is distinctly different. These thick sauces can be used before, during and after cooking!
And though a grill might be involved it is not necessary! Dip or spread, add it to sauces or even sneak a spoonful. Cook on the stove top or in an oven, it’s all good!
Get ready for the end of the summer taste that brings easy and beyond satisfying.

Maple Whiskey BBQ Sauce!
I reached for this one first. Maple Whiskey always sounds good.... As you pour (think thick ketchup) you can see the mustard seeds amongst the dark red sauce. And when you taste the molasses and maple syrup, combined with vinegar, ketchup and horseradish mustard, you get the little mustard seeds to pop in your mouth. A benefit for sure.
It’s a great combination of ingredients that tickles your lips and warms you up, just enough!

Carolina BBQ Sauce
The first bite is mustard, the second is the molasses combining with the vinegar to give it a unique twist finishing with more mustard and little pops of seeds. This is the one I was most apprehensive about, yet I think now it is my favorite of the 3. If you asked me why I don’t think I could give you an answer. It’s just the most mustad’ee in your mouth first.
It's a wonderful turmeric-filled sweet vinegar surrounded by mustard and filled with little seeds. Like a sauce of creamy mustard all twisted around like a swirl of savory cake frosting.

RIB-B-QUE BBQ SAUCE!
With a much darker approach to a barbecue sauce it does say, "meet me on top of my meat." Perhaps the least appealing on the spoon, straight up out of the jar you get the feeling that if you slather it on a nice rack of ribs before, during and after grilling it you are in for an incredible experience.
With just a little heat and mustard flavor, the twist this bbq has is some bite and a more salty approach which is achieved with soy sauce. Hard to identify, the soy sauce has the right feel and twinge to make your protein jump!

Salted Caramel Sauce!
Somehow Mark at Hawkshead takes the basic classic approach to making caramel sauce and just plain makes it better. The touch of salt and the smooth, clean taste of this caramel reminds me so of Banoffee (without the banana). It's easy to make your own caramel. It's harder to make it right and even harder to make it consistently so that it always tastes good! I prefer to have Mark make mine!

Sherry Vinegar
Vinagre de Jerez, by Sanchez Romate, is a genuine sherry vinegar, made in the traditional way in Jerez de la Frontera, Spain. It is sweet and delicately acidic with distinct almond notes. It's notoriously delicious with tomatoes: tomato salad, tomato gazpacho, and more.
Sherry vinegar, or more properly "Vinagre de Jerez," is considered by some to be the finest vinegar in the world. It's wine vinegar made from sherry, the famous Spanish fortified wine. "Fortified" means that when the grapes ferment into wine, neutral spirits are added, contributing flavor and character (and alcohol content). Real sherry vinegar is produced in the Spanish province of Cádiz on the Atlantic coast, inside an area known as the "sherry triangle."

Italian Fennel Pollen!
Fabulous on fish or grilled vegetables, the standard recipe is fennel pollen chicken.
It's so easy it transforms mundane chicken to the insane. And all you have to do is add fennel pollen to the mix of salt and pepper! It’s that easy!

Tellicherry Peppercorns
The term "Tellicherry" originated when these large, black peppercorns were exported from the Indian port city of the same name. These are the most pungent black peppercorns with the deepest hot flavor you'll ever find! Once traded, ounce for ounce, for pure gold, Tellicherry pepper is still a superlative spice that can add a depth of flavor – first heat, then a tinge of sweetness – to your everyday meals.

Roasted Halibut with Wine Braised Fennel Recipe
This recipe was adapted from the April 2011 issue of Food and Wine magazine, it is simple and delicious!
Grilled Mustard Chicken with Fresh Corn Polenta Recipe
If you love the taste of onion and mustard, then this is the grilled chicken for you. Easy to do, and so tasty.
The creamy polenta creates a nice, creamy bed for the chicken, and a wonderful way to both, use up left-over corn-on-the-cob, and soak up the wonderfully mustardy juices of the chicken. If you use already cooked corn-on-the-cob, add the corn about 1 minute before the polenta is done.
Ancient Grains "Risotto" Style, with Summer Vegetables Recipe
This is an awesome recipe using a delicious and healthy grain, emmer (farro), and seasonal summer vegetables. Michel Nischan (James Beard award winning chef) prepared this recipe at the 2011 Food and Wine Classic in Aspen, CO in June.
