Katz Black Button Sage Honey

It was spring when I met my honey

The cherry blossoms were blooming and the babies were out strolling with their newborn Moms.

Flowers and their buds were popping up everywhere. New green chutes, limbs and shiny leaves appeared out of nowhere.

It was warm, the sun was shining, and I was in my knickers.

Her nickname was Sage and she was cute as a button when we first met.

It’s an on-again, off-again love affair. More often than not she alternates years, sometimes even longer. Last year was a big year and why there is still honey to be had. Stormy weather and unexpected fires contributed to her presence and we wish her well. We hope she blooms again next year.

If you haven’t figured it out by now, Sage is one of my honey loves. Her full name is Black Button Sage.

This wonderful honey is smooth and delicate. With a flavor that is more than just sweet "honey", it changes as it flows through your mouth. As you get to know her, you will find her to be a quiet shaped personality!

Nectar gathered at the foothills of the California coastal mountain range, black sage honey has a medium amber color in the jar and on the spoon it is a light amber color that looks so natural. It is the color of purity.

With wonderful notes of flowers, the flavor floats and flows freely across your tongue and through your mouth. One never tires of the taste of freshness that fills your senses. If you like honey that flows and never, ever crystallizes, then this is the honey for you.

Beyond tea, it is perfect with cheese or drizzled across a salad or a grilled peach. And for breakfast from crumpets to croissant to toast or oatmeal, this honey makes life special.

Don’t miss out on having this Black Button Sage, the flowers bloom every year, but it is the rainfall that tells if there will be enough nectar to make honey. When it is available be sure to add a jar (or two) to your cupboard pantry. It never crystalizes and will last many lifetimes, assuming you can resist this wonder of a honey!

This very sugary and sweet honey crystallizes quickly separating into two sections. You might have to stir and heat lightly before you can have your first taste.

To the tongue it’s an unusual sweetness. Not exactly sweet sugar, it is a sweetness that is just plain sweet without a sickly sugary feel. There are hints of “floral” and the dessert. This honey finishes nicely. It really is non-offensive, perfect for making things!

We’ve come to love multi-floral honeys because they embody what we envision honey to be.

This multiflora blossom honey tips the taste right off the top with hints of cherry flavor. When this honey is on the tip of your tongue the flavor jumps to the roof of your mouth.

This honey really does feel like you can taste more than one flower nectar. Not a blending of nectars constructed by the bees, but in fact more than one flora…. not that we can define which ones they are. At the end, as you finish, hints of citrus on the very edges of your tongue come thru.

Avocado Blossom Raw Honey

As soon as you open the jar you can smell the richness of this avocado honey. This dark, super rich honey is strong, unlike the previous two honeys which float in an endless cloud in your mouth.

This deep honey seems to wrap itself around your tongue and hug you. And unlike many tree honeys, this honey is very, very smooth. No rough patches or jarring bitter notes, just a smooth treat.

Emboldened with flavor, it takes a moment to get used to but once you do you’ll find yourself sucking in your cheeks trying to get the last bit of honey taste.

And as you suck in your cheeks, at the back of your throat, the honey lingers holding its own as if sitting waiting for something to happen.

Big Island Bees Ohia Lehua Blossom Honey Organic Ohia Lehua Blossom

Organic 'Ohi'a Lehua Blossom honey is made from the blossom of the native 'Ohi'a tree. Ancient Hawaiians considered this tree sacred and carved temple images from its branches. Very rare, this honey is prized by connoisseurs for its light, delicate flavor and creamy texture.

Organic Big Island Bees' 'Ohi'a Lehua Blossom and Wilelaiki Blossom honey have the distinction of being certified as organic by the Hawaii Organic Farmer's Association. Generally, honey can only be characterized as organic if it meets the following criteria: 1. There have been no pesticides or insecticides within at least two miles of the floral source from which the honey is made; 2. The bees are not medicated to prevent disease; 3. The honey is packed using procedures that are consistent with organic practices.

Monograno Organic Kamut Chiocciole Pasta Khorasan Wheat Pasta

Known commercially as Kamut, this wheat from ancient times has its own distinct flavor. It's hard to explain, and it's hard to describe the taste, and it's hard to imagine that with just two ingredients a pasta can taste so different. It's not like a farro pasta with its earthy tones, or squid ink with its deep tones, no, it's something else, that makes this pasta taste good!

Perhaps because it's different, perhaps because it's closer to the beginning of time, or perhaps because the nutritional properties shine through, this pasta is worth trying!

Many foods do best when tested in their "environment", on rice, in a soup etc. Even some pastas do best when tasted and served with sauces. The nose is just like you would expect, Dijon. It's that sweet smell and a bit of tang from the vinegar. What you notice as well is that there is no unpleasant cheap vinegar leftover to wrinkle your nose. The taste is nice and clean, truly a pure mustard taste. I'm a believer!!
"Katz Meyer Lemon Olive Oil is WONDERFUL! I cut up parsnips, carrots & butternut squash into bite size pieces...sprinkled sea salt & pepper and drizzled the lemon olive oil to coat the veggies. Baked in a shallow pan at 325 degrees for a little over an hour. After they were cooked tender, I let them rest for a few minutes and then drizzled more of the lemon olive oil and also a drizzle of La Vecchia Aceto Balsamicico before serving. Oh my goodness...it was magnifico! I LOVE Chef Shop!!!"

BACK BY POPULAR DEMAND! If you haven't seen the movie, 100-Foot Journey, you absolutely must! It's bound to go down in movie history as a foodie classic - up there with Big Night and Julie & Julia and Babette's Feast (well... maybe not quite like Babette's Feast...).

Chef Pam has put together some classics, with a wee bit of French mixed in, based on the movie, "100-Foot Journey". Menu includes: Curry Chickpea Cakes with Raita and Sweet Pepper Pickle, Chicken Tikka Masala, Coconut Basmati Rice, Haricot Verts with Ginger, Chilies and Indian Spices, and Mango Milkshakes! You definitely don't want to miss out! Although seeing the movie before class is not a requirement, it's definitely recommended - just because it's sooooo good!
