Not just any Sherry Vinegar
There are just a few less than a zillion sherry vinegars out there in the world. We only have two. Well, actually we have four now. And they all are special and worth having and each has chefs who swear by only one!
What’s so very special about these two aged (10 and 12 years) sherry vinegars is that they start with Alvear’s award winning sweet and dry wines of Montilla.
These 100% Pedro Ximenez Sherries bring the amazing flavor profile over as they transition into vinegar!
So many sherry vinegars are sharp and can barely carry more than one note. These two, dry and sweet, are very special, complex, each with many flavor notes that are more akin to a fine wine than a typical harsh vinegar.
With careful sampling you can taste the wood of the aging barrels and the fruitiness of the grape that makes these sherry vinegars very, very special.
The dry, aged 12 years, has so much aroma punch it puckers your inner nose and soul. You can taste the wood in the finish, almost like a caramel flavor. A sharpness and an edge to the flavor receptors clearly defines lines, but not so painful that it isn't pleasant and rewarding.
The sweet to the nose is, well, sweet. It too has some distinct notes, well defined but not quite as aggressive; a more rounded edge. The sweet sings too, but perhaps a little less complex, leaving you with a smooth feeling. Aged ten years.
These sherry vinegars are at the top of the food pyramid. Think a simple Kefta Rub with the dry sherry for a beef or pork grill. The sweet would go well in a fruit cherry compote, a little acidity would make it sing!

Pico de Gallo
A modification
Not exactly the classic recipe of tomato, white onions, Serrano chile and a hit of lime juice. It came from the need to "harvest" tomatoes before they went bad and a bottle of Pedro Ximenez Sherry Vinegar. With only a 1/4 cup of vinegar, red onions and tomatoes, the classic is changed with a sweet ingredient and it rarely makes it past a bowl of chips!
Add whatever else you might want and you have a cool summer treat.
The PX Sweet 100% Pedro Ximenez Sherry Vinegar is the key to success! Basic sherry vinegar will be very sharp and really too tart.

Sweet & Smokey

Organic Meyer Lemon Olive Oil
Pressing lemons with the olives is like creating the perfect culinary joy.
When the lemons are Meyer lemons the oil becomes really special. There is a unique flavor that comes from the Meyer Lemon and it is hard to come by unless you are in one of the regions where they are grown.

Fruitcake
Perhaps we don't consider fruitcake as a summer food. Or perhaps you only have one slice in a blue moon at Christmas time.
To many though, it is the food of the knights. Traversing the plains as a reliable source of calories. Perhaps we are not in covered wagons or in armor, but even for serious car camping, fruitcake is a great treat! Carry a little in your pack for the day or slice it and toast it over the open fire.

Smores summer cheat
Some think that melting chocolate with the marshmallow is fun. With a milk chocolate bar from the five and dime it was possible. With a good 70% chocolate it just doesn't melt. Now a good chocolate, melted or not, is good to have. And when paired with a graham cracker and flamed marshmallow it is pretty much summer devine!
Though, if you took a chocolate creme from Andrea Slitti it would be a whole lot easier to get the chocolate and get the bonus of the hazelnut!

Hey Boo Lemon Coconut Curd
It’s this dreamy, creamy, all natural spread! Chilled in the refrigerator and then warmed (in your mouth) it goes from cold to gold!
It has a very soft mouth feel and, as you taste, even on a spoon, your inclination is to use the tip of your tongue to start. Pushing up to the roof of your mouth as the flavor of lemon dominates and mixes nicely with the coconut milk.

French Rosemary Honey
More common in Italy, France and Spain, this Rosemary honey is a perfect topper to those summer grilled fruits.
Lending a slightly herbaceous smell and flavor, the woodsy notes lend a nice balance to the sweeter, sugary flavors of the honey.
Our first choice is to mix into a little creme fraise and spooned atop grilled peaches. Yum!

BACK BY POPULAR DEMAND! If you haven't seen the movie, 100-Foot Journey, you absolutely must! It's bound to go down in movie history as a foodie classic - up there with Big Night, Julie & Julia and Babette's Feast (well...maybe not quite like Babette's Feast).
Chef Pam has put together some classics, with a wee bit of French mixed in, based on the movie, "100-Foot Journey". Menu includes: Curry Chickpea Cakes with Raita and Sweet Pepper Pickle, Chicken Tikka Masala, Coconut Basmati Rice, Haricot Verts with Ginger, Chilies and Indian Spices, and Mango Milkshakes!
