On a recent trip to NYC I visited with our friend David who over the years has introduced us to some of our all time favorite foods. And though we have had Lakrids Licorice for a bit, it is his personal enthusiasm for his “finds” that is contagious.

“I know you have carried them and that Eliza just ordered more, but you have to try these. I just visited the factory and met with Johan. This is a man who set out more than ten years ago to create liquorice anew!”

David went on to show me pictures from the factory on his phone, explaining all the cool machines.

“It’s such a great product” he said “and I find once people try it, they start to love it. Give them a taste of “A” (Chocolate Coated Licorice), I call it the Gateway Licorice (drug) to a happier life!”

I did and they are good! I like them all, though if I could only have one on the dessert island, it would be “A”.

Just because licorice (liquorice) is good for you doesn’t mean it’s top of your list to snack on or add to your next dish. And for many of us, it seems like the last thing you want in your mouth! But it’s worth the taste test, and once you do, like the Scandinavians do, the sweetness of nature will make you happy.

This lemon peel looks orange, yet the taste is lemon. Like many candied peels it has a sticky exterior. Though it won't keep you from eating out-of-hand as a treat. This candied citron in cubes is ideal in many ways. The cubes are small and easy to work with. The don't clump in a way that makes it impossible to separate like many candied fruit we have seen. And because of the small size we don't find it to be an overwhelming cube of "chew". The light green color makes a Christmas holiday cookie twist and shout. Think out of the box and you might find them in your morning oatmeal.

Inaka Udon Easy different Noodles

Making your own udon noodles is as easy as making most noodles. Salt, water, flour, mixed, kneaded, rolled, cut. It’s great if you want a quiet moment for yourself and nothing beats freshly cut noodles.

On the other hand, when you want to savor the time you have to be blissful with your udon noodle soup instead, and not making oodles of noodles, then Inaka Udon is the right choice to make. These chewy, soft, fat noodles make for a wonderful carrier for something green and a little protein.

A hot soup somehow can make a cold day seem just about right. Greens cooked quickly in a hot pot along with mushrooms and protein, like super thin uncooked chicken, bbq pork, or tofu, and it is a delectable meal that takes all of about ten minutes, the time to cook the udon.

Udon noodles are eaten both hot and cold, kept simple or transformed when tossed with ingredients like soy sauce, sesame oils, or oyster sauce. And, whether you fry them or soup’em, the softer, plumped up udon noodle is fabulous.

This reduced veal and beef stock is the classic Glace de Viande Gold.

Use full strength or add up to 3 parts hot water for a classic glace de veau. To make a classic reduced veal stock, use 1 part Glace de Veau Gold to 20 parts hot water. Bring to a light simmer and whisk until completely dissolved. If a stronger stock is desired, use less water or add additional Glace de Veau Gold.
