Beaufort D’Alpage!
The ultimate melted cheese.

If you like cheese, you will love Beaufort D’Alpage. (Summer from chalets (shepherds huts) at high altitude).

Here the Tarentaise gaze at the French Alps...while grazing freely, choosing to eat what they want of the grasses and flowers of the high pasture. These Tarentaise cattle (a domesticated cow that adapted to high altitude hiking in steep and treacherous hoofing and have not co-mingled with other cows) are from the Haute-Savoie and are known to make some of the best milk on the planet for making cheese.

Beaufort D’Alpage is made in wheels that first remind you of Parmigiano-Reggiano and can often weigh over 100 pounds.

This Beaufort D’Alpage is made by Brand Coopérative Laitière de Haute Tarentaise, is a coopérative located in Bourg St Maurice in close proximity to the famous French Alps Ski Resorts. It is these ski slopes in the winter that turn into the alpine meadows full of roughages in the Spring, Summer and early Fall.

This semi-hard cow’s milk cheese goes thru a creation process of curdling, scaling, brewing, molding, pressing, and hand work of salt rubbing in the morning and massaging in the afternoon. This process lasts up to two months. Then it is smear-ripened to create the strong flavor and pale yellow rind.

Aged over 14 months which brings a more mature flavor of nuttiness, floral, beef broth notes, with herbal and a hint of hay.

This AOC Beaufort D’Alpage is the best of the best, as summer alpine is the most cherished of all the Beaufort. This cheese melts easily and is known for making the best fondue or a grilled cheese sandwich. Or you can cube it up, poke it with a toothpick and enjoy it with some fruity wine!

Italian Made Panettone It's a wonderful time of year!

The warehouse is packed like sardines in a can. We are loaded to the gills and bursting at the seams with Panettone. Though there is nothing fishy about the Italian Panettone and there are no seams, it is just the best light and fluffy bread you can sink your hand into (with the intent of moving it from the hand to the mouth).

Though the warehouse is full with ne’er a place to walk, the panettone disappears in a blink of an eye. Remember when we sell out, that is it for the season! No re-orders (we order in July) and then the wait until next year!

With a name like Quadrotta you would think it would be hard and tough to break. Instead it is soft to the touch and easy to break into pieces. When you open the Dark chocolate with hazelnuts you get this wonderful whiff of hazelnuts and the dry edges of a dark chocolate. If you love hazelnuts then imagine Gianduia with hazelnut bits! And the third is a wonderful mix of white chocolate, pistachios and almonds!

Smooth and easy, it melts quickly. Tongue satisfying, it is after it is gone you feel compelled to suck in your cheeks to get the last of the wonderful taste combination! Share if you must but we recommend keeping it for yourself.

Heritage Shortbread Shortbread of South Carolina

A higher ratio of fat to gluten = short.

Think sugar, butter, flour, pinch of salt combined.

Biscuit bread in Medieval times in Scotland started with leftover bread dough, baked in a low temperature oven until it dried out into a rusk. Biscuit = rusk = twice baked.

Leftovers of dough made way to the first published recipe for short-bread (in the 1700’s?) when yeast was replaced with butter into the “same” shortbread recipe we eat today.

The word “same” is used loosely. Though, the recipe is “easy” on paper, great results are not. Heritage Shortbread is an excellent representation of what you want in a “short” bread.

It's crispy, crumbly, and tasty, every time you bite into each biscuit. Not too hard and with just the right feel, they are the best shortbread we have had in a long, long time! It is much more difficult to find a shortbread that makes people say, "That's good!" than you might think. Well, so far, both in the store and in the warehouse, everyone has said, "That's great!"

It doesn't get much better than that! A classic holiday hostess gift in the Scottish/English speaking world.
