I have been fascinated with sesame seeds for the last couple of years. The health benefits have been touted throughout history as a food that can cure your life's ailments. From anti-aging to healthy skin, removing plaque and improving digestion, creating more energy and optimizing blood pressure, you can see why you might want to eat more sesame seeds.

Sesame seeds are one of the oldest known (over 3000 years) oil seed crops. Domesticated seeds are drought tolerant and can grow where other plants cannot. Ranking 8th in the world production of edible seed oils they contains 50% oil and 25% protein.

And Black Sesame Seeds are claimed to turn your hair (back to) black! Personally this is why I plan on adding the amazing little seed to my diet! (Ok so 2 years of continuous eating for a possible change might be a little too optimistic...)

I have always enjoyed the sweet paste in Sesame Balls never knowing it was black sesame seed paste (always thought it was a sweet bean) sweetened with honey or sugar.

Black sesame seeds when toasted and made into a paste have this wonderful rich, nutty taste and a smooth feel! (Be sure to mix thoroughly as the oil will separate). Add castor (superfine) sugar and mix in to make a sweet paste. The granules don’t really dissolve, instead they give little balls of texture to tickle your senses with hits of sweetness.

Or add the honey of your choice for a new level of complexity. The flavor of your honey will come through and can really add a wonderful twist to a pastry. Make your own Sesame Balls, spread it on toast or eat it with a spoon! It’s a food that can change your day or maybe the color of your hair....

Sesamum radiatum and Sesamum indicum are flowering plants in the genus Sesamum (also called benne) native to Africa and India. It is black and white how they are different (just color). On the inside the raw seeds   are very similar. It is when they are toasted is when the Sesamum radiatum show its nuttier personality and has a nice character building bitterness.

Raw sesame seeds are easy to toast and if you have the time it is a wonderful way to chill and pass the time.

Keep them frozen to preserve the oils and get a shelf life of up to a year. You can add them to almost any dish. Add them to a stir fry, top your next steak or pastry from cookies to pie!

Harissa is not one of those condiments that has only one authentic recipe. In fact, from town to town, region to region, it can vary from a little to a lot. From texture to ingredients, and from how hot or not so much. Of all the ones we have tried this is the very best!

Here, in this jar, is Mehdi's mom's recipe. Authentic to his family, Mehdi strived to recreate Moroccan Harissa as if it was made at home in his kitchen growing up.

Made in small batches every week or so for the local chefs, we benefit with small shipments as well, bringing you freshly ground ingredients.

The finest ingredients from around the world, freshly ground and combined make one of the freshest products we carry. It has the feeling of smooth heat and all the attention to detail that makes this Moroccan condiment a treat!

Harissa remains a staple as a Moroccan condiment, much like Ketchup, Tabasco or Siracha is in many American homes. Though some key ingredients remain essential to every Moroccan Harissa recipe, variances do exist, setting some apart from the other.

How is Villa Jerada’s harissa recipe any different from what’s in the market today? Well first, though this sauce remains prevalent in Morocco, its influence on this recipe goes beyond the geography of Mehdi's native country and past the vibrant street culture that comprised his upbringing, to the center of where his love for food began.

Cocoa Powder Hot Chocolate Recipe


This is a classic hot cocoa recipe - perfect if made with a rich, high-fat, unsweetened cocoa powder like ChefShop Cocoa Powder, and rich whole milk or half-and-half from your local dairy.

Ingredients:
1/2 cup India Tree Super Fine Caster Sugar
3/4 cup ChefShop Cocoa Powder
2 1/2 cups half-and-half
1/4 teaspoon fine Trapani Sea Salt
1/2 teaspoon Heilala Vanilla Extract

Directions:
1. Mix sugar, half-and-half, cocoa powder and salt together in a saucepan. Stir over medium heat until mixture gets to just below boiling and the sugar has dissolved. Cook, stirring constantly, for 1 minute. Remove from heat and add vanilla. Blend and serve immediately.
Yield: 4 servings
